نرگسی مدرن/Spinach Omelette

My mom used to make a different version of this when I was a kid. A more traditional one, I'd say. Something she'd probably learnt from her mom.

dice two tomatoes; beat 4 eggs with salt and red pepper powder; add tomatoes in; stir-fry one leek cut in rings in a tea spoon of butter for one minute and add to egg mix; stir spinach in the pan for one minute and add to the mix.
pre heat the oven tray with a tbs of butter in oven (175C) spread the mix in the tray.
It's ready in about 15 minutes.
