|fry one yellow courgette and one bell pepper in the oven with a bit of olive oil|
|stir fry one onion and add 400 gr spinach. Once ready add half an avocado, bell pepper and yellow courgette to it.|
add pieces of pickled Jalapeno and mix with tomatillo salsa verde. Serve the dish with rice or tortilla an enjoy!
