Mexican Delight

A tasty and spicy dish I enjoyed in Chicago and reproduced at home


fry one yellow courgette and one bell pepper in the oven with a bit of olive oil

stir fry one onion and add 400 gr spinach. Once ready add half an avocado, bell pepper and yellow courgette to it.
add pieces of pickled Jalapeno and mix with tomatillo salsa verde. Serve the dish with rice or tortilla an enjoy!
